I have had a craving for really good egg rolls lately and not the frozen kind you buy in a box at Walmart. So, I decided it was time to see if I could attempt to make my own. Since I have been meal planning lately we have been trying some more Chinese dishes. And what Chinese dish is complete without a good egg roll? Well, it turned out to not be as hard as I had always thought it would be, however my small project ended up turning into 80 egg rolls! I followed a recipe that said it would make about 15 and I thought I should double that and make about 30. Well, I guess my large size head of cabbage was bigger than the one in the recipe because I just kept filling egg roll wrappers one after another until I ended up with 80! I had to break it up into two days worth because I had only bought 2 egg roll wrap packages (enough for 40) thinking that was all I would need. So, another trip to Walmart and our freezer is now well stocked with plenty of egg rolls for our Chinese meals!

It was a good project and I already know what I will change to the recipe next time. Although, with 80 needing to be eaten, next time will be quite a while from now!

A Quick Trip To MI

This past Monday and Tuesday Jesse and I spent some time with my sister and brother in law and their family in Escanaba. It had been quite a while since we ventured that way and we thought it about time to see the U.P. again. As Lauren is getting older she is just enjoying spending time with others more and more. Jack is too but doesn’t fully appreciate it quite yet! It was a quick trip but we managed to get some good food in as well as some needed visiting time. Here are a few pictures from our trip…

I’m afraid that I blinked. Lauren has just grown up right before my eyes. Here she is coloring in the kids school room. She looked at their desks and said to me, “Mommy, I hope one day I can have a desk like that.” Where has the time gone?

We sure enjoyed our time as always, though it was short. We give all the praise and glory to God for the rich blessing he has given us in our families.

Is She Really Big Enough?

That’s right! Our little girl just keep continuing to amaze us! The other day we decided it might be time for her to give skiing a try. After all she is almost 3 and VERY independent! So, we headed over to camp, bundled the kids up and rented some skis for her.

To sum up the experience, SHE LOVED IT!! You can’t really teach someone who is barely over 3 feet tall, too many practical skiing techniques but what Jesse did teach her she caught on to very well. It was fun to see our little girl growing up before our eyes once again. Seems like that has been happening a lot lately. The weather was beautiful and Jack enjoyed being outside in the sled with us all.

Winter Family Camp 2010

It’s that time of year! Winter Family Camp 2010 is upon us and this year God has blessed us with terrific weather! If I recall correctly, last year we had weather in the 40’s which turned everything to a snowy soup! And, the year before was frigidly cold.

I’ve been out shooting some pictures of the kids and families as they enjoy spending time together in the beautiful outdoors. Here they are:

A day in the life of a CFS Staff Wife

Today I left the kids home with Jesse and headed out to camp. Several times a year camp has mailings that go out for various reasons. Today I was scheduled to help get over 15,000 letters stuffed, labeled, sealed and mailed! Wow, how’s that for a days work. It is always a great time to get together with the other staff ladies and I do look forward to that time whenever I go and help.

I thought I would post a few pictures for those of you that wonder what it looks like to do a mailing with that many letters. So, I will let the pictures do the talking. What would I do without a camera?

Here I am working on “Arthur” our sealing machine. We just named him today. I guess that is what happens when you send over 15,000 envelopes through. You have lots of time to stand and look at the machine, and think of good names. I was actually surprised to learn that for as long as Arthur has been around, today was the first time he has ever been given a name. So, glad I accomplished this important task!

Here is a picture of just half the room. The other half of the room had just as many if not more people. Those that you see here are either stuffing the envelopes, or labeling them.

So, as you can see it is quite the process. We worked from 9 in the morning until about 2:30 in the afternoon. And actually we got done earlier than anticipated. That is always nice when that happens.

When I came home Lauren told me all about her day. It included a trip to the hardware store with daddy, the coffee shop, and the library. And then she ended by saying that she went on a nice adventure. Sounds like they were well taken care of in my absence. Here are a few pictures of the kiddos, mostly for the grandma’s!
