We gained a new family member!
This past weekend Jesse’s sister Hannah got married. We welcome Justin into the family and now that makes a total of 3 brothers-in-law. Guess we are going to have to start renting a hotel for family gatherings now!
We praise God that the two of them love the Lord and are starting their life with the right foundation. Jesse was able to take the pictures for the wedding and Lauren made her flower girl debut. I know as her mom I am a little bias but she was so stinkin cute. I must admit though when she started walking down the aisle I teared up thinking in just a few short years she will be doing this for real! It just makes us grateful for everyday we have with our children. What a gift.

My latest Project
I have had a craving for really good egg rolls lately and not the frozen kind you buy in a box at Walmart. So, I decided it was time to see if I could attempt to make my own. Since I have been meal planning lately we have been trying some more Chinese dishes. And what Chinese dish is complete without a good egg roll? Well, it turned out to not be as hard as I had always thought it would be, however my small project ended up turning into 80 egg rolls! I followed a recipe that said it would make about 15 and I thought I should double that and make about 30. Well, I guess my large size head of cabbage was bigger than the one in the recipe because I just kept filling egg roll wrappers one after another until I ended up with 80! I had to break it up into two days worth because I had only bought 2 egg roll wrap packages (enough for 40) thinking that was all I would need. So, another trip to Walmart and our freezer is now well stocked with plenty of egg rolls for our Chinese meals!

It was a good project and I already know what I will change to the recipe next time. Although, with 80 needing to be eaten, next time will be quite a while from now!

A Quick Trip To MI
This past Monday and Tuesday Jesse and I spent some time with my sister and brother in law and their family in Escanaba. It had been quite a while since we ventured that way and we thought it about time to see the U.P. again. As Lauren is getting older she is just enjoying spending time with others more and more. Jack is too but doesn’t fully appreciate it quite yet! It was a quick trip but we managed to get some good food in as well as some needed visiting time. Here are a few pictures from our trip…

I’m afraid that I blinked. Lauren has just grown up right before my eyes. Here she is coloring in the kids school room. She looked at their desks and said to me, “Mommy, I hope one day I can have a desk like that.” Where has the time gone?
We sure enjoyed our time as always, though it was short. We give all the praise and glory to God for the rich blessing he has given us in our families.
